Why not try making....VICTORIA SANDWICHPreparation: 10 minutesBaking time : 20 - 25 minutesPortions: 8INGREDIENTS100g (4oz) McDougalls Self Raising Flour100g (4oz) caster sugar100g (4oz) butter2 medium eggs3-4 drops vanilla essenceTo finish:Jam, whipped cream, icing sugarMETHOD1. Grease and line 2 x 18cm (7") cake tins, Place the butter, sugar, eggs, vanilla essence and McDougalls Self Raising flour into a mixing bowl. Select the beater attachment.2. Blend together for 30 seconds on MEDIUM speed, scrape down and continue to mix for a further 2 minutes on MEDIUM speed.3. Pour into the prepared cake tins and bake in a pre-heated oven at 180°C/350°F/Gas Mark 4 for 20-25 minutes. For fan-assisted ovens, cook at 160°C/320°F/Gas Mark 3.4. Remove from oven and allow to cool on a wire rack, fill with jam, cream and dust with icing sugar, cut into portions.SERVING SUGGESTIONSServe with warmed Bird's Custard or fresh summer berries.Useful hints and tips…• Pre-sifted so you don't have to.• Ideal for cookies, brownies, muffins, cakes, sponges and scones.• For best results, once the bag is opened, keep tightly closed and use within six monthsThis product needs to be baked prior to consumption.
